Super Yummy Dinner!

I tried a new recipe the other night and thought I would share it with all of you. It is one of Steve's new favorite meals and really easy to make. It has the delicious taste of the Mediterranean and seriously tastes like something from an expensive Italian restaurant. Enjoy!

Baked Oregano Chicken & Potatoes

serves 4 to 6

Ingredients
* 1/2 cup Extra Virgin Olive Oil, plus a little for the baking pan
* 1/2 cup grated Parmesan cheese
* 1/4 cup plain dry bread crumbs
* 3/4 tsp dried oregano
* 2 cloves garlic, minced (about 1 tsp already minced)
* 1/2 tsp salt
* 1/2 tsp ground black pepper
* 2 thawed, boneless, skinless chicken breasts; cut in half
* 2 large red or white potatoes, cut into 1/2 inch thick slices (you can do more if you like)
*1 can (14.5 oz) diced tomatoes, drained
* Shredded mozzarella cheese
* Favorite red sauce (optional)

Directions
1. Preheat the oven to 375 degrees. Coat a 16x10 baking pan with olive oil

2. In a medium bowl, mix the cheese, bread crumbs, oregano, garlic, salt, and pepper. Dip both sides of the chicken and potato slices into the mixture. Shake off excess. Arrange the chicken and potatoes in slightly overlapping rows in the pan. Sprinkle with the tomatoes and the remaining crumb mixture. Drizzle with the olive oil.

3. Bake for about 45 minutes or until the potatoes are tender when pierced with a knife.

4. Remove from the oven and sprinkle with mozzarella cheese. Cover tightly with foil and let the dish sit for 5 minutes before serving. Enjoy!

Optional:
If you like having sauce with your dish like Steve does, heat a small amount of your favorite marinara sauce and have it available on the table for people to add to their plate. I think it is delicious both ways, see which you prefer.
